I created a profile that allows the end-user to choose their role for an event. Then I signed up multiple participants for an event, choosing a different role for each. But all the participants were recorded as having the default role ("Student") for the event. I also tried signing up as a solo participant ( no additional participants) and choose the role as "Volunteer" . Yet I was recorded as having the default role("Student") for the event

This is a bug - the main purpose of allowing admin's to use the Participant Role field in a profile is to support the use case you've described (registering folks get to choose from a set of roles).

I've filed an issue to fix this - you can track it at:
