Why I has only    Country  to choose in nation lists, and how i can populate it, i just need to write: Italy..
i imagine then I'll miss also province..

Check Global Settings >> Localization (http://sandbox.civicrm.org/civicrm/admin/setting/localization?reset=1 )
You can set available countries.
