I've just set up my return path using the AMaVis method.  It's working (in that I can write a verp-formatted unsubscribe, run the cron job, it will process the message and send me back a "you've been unsubscribed" message).  Yay!

The thing I'm noticing though is that the mail isn't disappearing from /var/spool/mail/info (my user for the verp messages is 'info').

I would think that it should delete messages as it processes them, but it's not.  What do you'all recommend?

We don't delete messages after processing, and that may be useful for testing purpose also.
Do you see any point in deleting them?

I suppose years down the road that mail spool can get big and start filling up the disk... no?

You will have to manually delete it or configure mailing client to delete mails once it fetches.
