it is possible that a search profile with only one form field is going to search into multiple fields?

Not sure what you mean ?? Please describe the situation / question in more detail with an example.

for example I add in my Db many hotels, with these fields: description, phone, fax, name o hotel, etc..
and i desire to make the keyword search, search in on name of hotel nd also in description of hotel, could be it possible?

In your Profile, edit the Hotel Description field and make it "Searchable" (visibility must be Public or Public and Listings).
