Okay to add mysql path after install?

Is it okay to add the path to mysql in the civicrm settings file after installation or will this corrupt the install in any way?

This shouldn't cause problems. I think the primary (only?) place we use that path is for the "Backup Data" function in the admin menu. (I'm assuming your MySQL server is running and is referenced properly the the DSN (data-source) settings in civicrm.settings.php.)
