Offline Membership Renewal

Hi I'm new to CiviCRM and Drupal. I have just been looking at using CiviCRM as a solution for a membership NFP organisation and I think that the fit is very good for their needs. The only bit that I am not sure about is the Membership renewal process. The process would be offline, so an administrator would send out the renewal and process a corresponding contribute record once the renewal payment was recived.

So my questions are:

1. How can a person check the renewal document to be sent out before it goes. So not using the automatic renewal process through CRON just in case there is a problem.

2. Organisations are members not contacts - therefore how can you automatically update all relationship records for an organisation for a renewal. I think it would work with the CRON thing, but I am not sure it works without it.

3. Is there something else that I should be doing as I am new to this whole system.
