multiple nations and regions per contact

In my situation i have to write for my contacts in which nations and which regions they are working, so I need a multiple selectable list of nations and regions per any contact, which could be the best way to solve this needing with civicrm?

custom fields or tags or groups

i think for sure not groups, because any company can be with multiple nations and regions
but civicmr is just using a very good list of nations and regions (but not perfect, for example was missing Vatican)

I need to write:
1) in which nations and regions they are working
2) in which nations and regions they plan to work in future

so maybe i cold copy the list from civicrm too.. ?
