New data category type

Hi, I am completely new to civicrm and am at present experimenting with the online drupal demo. On the demo you can add data in 5 categories: individual, organisation, household, activity and group. If a seperate category was needed can it be created? Or can extra information only be added as custom data fields under one of the standard five categories?

I apologise in advance as I know the answer to this question is already out there somewhere, but because i am new to this and don't know quite what terminology to use I couldn't find it! But i did look, honest.

I would use custom data if i want to collect any data that is not possible using standard fields.
