civicase as project management software

It seems to me that civicase could easily be used as simple project management software especially for NGOs and service related businesses.

Since projects are often done on behalf of client organisations or donor organisations the case would attach to that organisation and then you would simply create the relevant activities for the case/project. Internal projects could be cases assigned to your own organisation. If there are projects that could be spread across many people/organisations then you could simply create a 'pretend' organisation that represents the project and attach the case to that.

Am I right in my thinking? or am I missing something important?

Also - could this effectively superceed CiviGrant as more effective Donor Management?

I suspect there are elements in a "dedicated" Project Management application that aren't covered / optimized in our design for CiviCase. However I think there's quite a bit of functionality that does cross-over nicely. Hopefully you'll have time to try your idea out in the near future w/ some real-life projects and see how good the fit is (and post back to us).
