I scheduled a mailing to around 250 people, containing a reference / link to a CiviContribute page. The mailing reported success but not everyonw (including me and one of the other administrators) received the email.

Can you offer any ideas why this could have happened?

Looking at the mailing report, there were clicks on the link (15 at last count), and some of those resulted in actual contributions. So some people received the email.

You might want to make sure following things with related to those contact who does not received mailing.
1. Make sure twice email addresses are correct.
2. Contacts are not deceased.
3. Contacts does not have "NO BULK EMAILS (User Opt Out)" option set.
4. Contacts email address should not be "On Hold".

Is there a way that I can look at the log of the mailing to see who it was sent to?

In addition

1. Make sure twice email addresses are correct.

You can use Search Builder (under Find Contacts) to search for Individuals who have No Bulk Email and / or On Hold flags set. Use = as your operator and 1 as your value to check for records where these flags are set.

go to CiviMail -> click "Report" for give mailing from Action -> check "Intended Recipients"

I mean to say, double check "email address"  for target contacts.

Best bet would be find contacts -> more action -> send email to contacts.
Are these contacts able to receive email ?
