So when the user (who is logged in) finishes the signup their drupal role is changed as well.
For example they may start out as Authenticated but after this they become Role (drupal) Producer

This functionality doesn't exist inside CiviContribute. You might check out this module referenced by Kieran in a recent post to see if it does some / all of what you need:
