When I set up multiple choice options in a custom data field, such as a select menu, I am asked for the value of each option (in addition to the label).

What are values used for? I see that in the demo, the values that were entered for just such a custom field were simply the first letter of each label.

Sometimes it is useful to store a different "value" in the DB than the "label" that you show to a user for SELECT, RADIO or CHECKBOX type field. The most common reason is that you are importing data from another application that uses "codes", OR exporting data to an application that needs "codes".

EXAMPLE: What is your country of birth?

Label (shown to user) Value (stored in DB)
============= =============
United Kingdom UK

If you don't "need" to import or export values that are different than what you show to users, than you can make the Label and Value the same.
