Multiple session registration on one event form

I've been reviewing the forum discussions about handling registration for multiple events in a conference with one event, using price sets. We have a program that consists of 5 workshops and a practicum. Participants can either take workshops individually or enroll in all 5 as part of a single cohort (except the practicum). While price sets might handle the dollar side of the transaction, would this allow us to create class lists and control enrolment size for each workshop? My hunch is "no" from what I've read in the wiki and on the forum - but I thought I'd check.
