Just looking at (editing) this from the CiviBook

# Redirect URL. When someone clicks save to submit the form, do you want to take them to a specific URL? Most commonly, you would create a special Thank-You page on your website to redirect people to.
# Cancel Redirect URL. Similar to the previous item, what is the URL you want to redirect people to if they click to cancel the form.

Am I correct in believing that these fields do not apply when the profile is embedded in an event sign-up page or contribution page. When else don't they apply?

Pretty sure that's correct - and those seem to be the important exceptions to note in the book / doc. (These settings are also not relevant when a Profile is used for contact view, search, listings, batch update, advanced search "views" - but probably not expected by the user either.)
