Joomla 1.5.9 CivicRM 2.2.5

I, as administrator, would like to receive an email when a form is filled out and submitted.

I have stand-alone forms that are set as Profiles (Requesting Information, New Volunteer, etc) and I would automatically like to receive an email once a form is submitted.

The obvious concern that I have is that that I will miss important information or requests, but I am also concerned about dealing with a bunch of spam/ garbage in the database.

I am happy to delve into Joomla hooks- but go easy on me as this is new territory.

Enter one or more email addresses in the "Notify on Submit" field under Settings >> Advanced Settings for your profiles. You should get an email with the data values and a link to the newly created / updated contact recrord whenever someone submits the forms.
