Smart Groups and Dynamic Members/Updates

I’d like to create a Smart Group in CiviCRM for anyone who has made a purchase via our web store (we’re using Ubercart).  I would want to send an e-mail to anyone who has made a purchase within the last seven days. The e-mail would be a survey that asks a few brief questions about their experience on our store. We use a nine digit source code to track all gifts in CiviCRM and then we synch that info to our main offline database from Ubercart to CiviCRM). I believe that I can build the smart group using the source code, but I'm not sure how to build the group based on the source code field.

Here are my questions:
1)   Where in the smart group menu can I create my group (or find members) via a source code?
2)   How can I create this smart group so that new store customers are added dynamically?
3)   How can I make sure that new store customer (or repeat customers who made a purchase) receive the survey e-mail once only (unless they make another gift). I don’t want to create a smart group that constantly resends the same e-mail to the list.
