Default assign activity to Added By contact

I have looked through the settings, but I can't see anything like this. Is it possible to automatically assign a new activity to the contact that adds it?

Simple answer is ... not without writing some code (e.g. implementing the buildForm hook).

However, I'm wondering about the use case. The "assumption" in the software is that an activity "belongs" to the person adding it unless they subsequently "assign" it to someone else. Scheduled (not completed) activities which I create show up on my CiviCRM home page (as a simple tickler).

Thanks, when you say CiviCRM home page are you refering to the main link?  For my config - all activities for all users show in chronological order - should I be creating a profile?  When I look at the contact dashboard for my user I do not see any activities.

Yes, the "main link". All scheduled activities show for administrators (administer CiviCRM) - for everyone else only "their" activities s/b displayed on that page. There's also a "view all activities" Drupal permission which affects this (my recollection is that it allows non-admin to see all activities).
