I just install CiviCRM. Looks like a fine program. There are some issues, however, I can't seem to figure out.

1. Admin will not let me input text in the content field. I able to complete all other fields, but not input a paragraph like it provides.

2. I do not want the contribution amount to be first. Giving etiquette would receive other information first. You don't ask someone how much are they going to give before you know their name. How do I change position? Other fields will let me change. The email address comes next, but I want it further down the list.

3. The word "organisations" is misspelled in hard coding - how do I correction... "s" should be "z" for proper US English.

CiviCRM is a fine program.  ;D

1) what content field, specifically?

2) you can modify the templates to shift order and stuff. see: http://wiki.civicrm.org/confluence/display/CRMDOC/Customize+Built-in%2C+Profile%2C+Contribution+and+Event+Registration+Screens

3) you'll have to change that as you come across it (look into using the override template and php directories so that you don't have to modify core). i'm surprised though. the default install uses en_US, which uses the "z" most of the time. must be a stray instance of the "s".
