I sent out a test email with CiviMail. Works okay (ended up in my spam folder, but showed up), and I'm wondering where the From name that the email is sent actually comes from. My emails are being shown as from "CiviCRM Test Mailer (GrowFood.org)". How can I change this?

On the demo site:

(although I think the Test mails are hard-coded somewhere to differentiate them from the actual civiMails

As Eileen noted, you can set one or more "choices" and a default for the FROM email address in that admin screen. Then when creating the mailing you select from that set of choices in a drop-down on the Compose / Upload Message step.
