I would recommend SMTP. Although sendmail also works fine for me.

For automatic bounce handling (using VERP), SMTP is the way to go.  Few sendmail installs will allow you to set the return-path dynamically, and the sender of your mailouts will have bounces returned to them (rather than to the automatic bounce handling).

With larger mailouts, this can be a real issue. If you're not using the bounce handler / VERP, or don't mind dealing with the bounces yourself, that won't matter.

(To clarify: "sendmail" here means "use sendmail from commandline", not Sendmail the daemon.)

Also, MTAs such as Postfix and (I think) Exim implement sendmail when they are installed. So all you achieve by using sendmail in that case is limiting your flexibility, as @xurizaemon rightly points out.
