How to setup different contact types with their own custom data?

If I have different contact types (e.g. doctor, patient, volunteer,...) each having its own custom data, how should I set it up in Civicrm?  Should I use tags (or groups) to store the contact types?  But I don't seem to be able to assign a group of custom fields to a specific tag (or group).

As far as I know, all the custom fields will appear under the Custom Data section no matter what.  Is that correct?  If I have a lot of contact types, then that list would be quite long.

contact subtypes are coming in 3.1 :)

Understood.

So I guess the best approach at this moment is to create different tags for the contact types.  And then create different groups of custom fields, one for each contact type.  And we will have to rely on the user to determine which group of custom fields to use.
