I understand that I can use the advanced search function to select a group of contacts to send email to.  My question is, after I have got the search result, why do I have to select all contacts to create the mailing list?

Unclear if you are talking about civimail or not.

You need to select so you can then tell the system that you want to send them an email either via More Actions, or via creating a Group or Smart Group that is set to be a Mailing List and using this in CiviMail so you don't have to do a Search the next time you want to send one to them.

Or you can send to them via CiviMail by adding them to an existing 'base group' but this won't let them unsub etc.

This is all pretty clearly explained in the book.

Yes if you are talking about adding/excluding to a Smart Group, but again your description is really specific enough to help us help you.

My first question is.  Let's say I use the search function and find 30 contacts.  I cannot send email to just 14 of them by selecting "Schedule/Send Mass Mailing" from the More action menu.  This action would require me to select all contacts.  Is that the case?

Yes, You has to have select entire set of search result, you can't perform this action w/ subset.

My second question is.  Can I add and remove contacts from the Smart Group.
